  • Garlic cloves - 2
  • Lamb shoulder - 400 grams
  • Carrots - 200 grams
  • Pitted dates - 30 grams
  • Dried apricots - 30 grams
  • Tomato paste - 20 grams
  • Canned peeled tomatoes in juice - 400 grams
  • Water - 850 grams
  • Beef bouillon cube - 1
  • Pepper - 0.25 teaspoon
  • Cumin - 0.5 teaspoon
  • Curry - 1.5 teaspoons
  • Ground cinnamon - 2 pinches
  • Green beans - 200 grams
  • Shelled almonds - 30 grams
  • Medium couscous semolina - 280 grams
  • Butter - 20 grams
  • Salt - 1 teaspoon
  • Fresh mint - 12 leaves

Thermomix Instructions

Place 2 peeled and quartered onions into the Thermomix bowl.

Add 2 peeled garlic cloves into the Thermomix bowl.

Attach the lid with the measuring cup.

Blend 5 seconds/speed 5.

Add 400 grams of cubed lamb shoulder into the Thermomix bowl.

Attach the lid with the measuring cup.

Cook 6 minutes/Varoma/speed 1.

Add 200 grams of peeled and sliced carrots into the Thermomix bowl.

Add 30 grams of pitted dates into the Thermomix bowl.

Add 30 grams of dried pitted apricots into the Thermomix bowl.

Add 20 grams of tomato paste into the Thermomix bowl.

Add 400 grams of peeled tomatoes in juice into the Thermomix bowl.

Add 500 grams of water into the Thermomix bowl.

Add 1 beef bouillon cube into the Thermomix bowl.

Add ¼ teaspoon of pepper into the Thermomix bowl.

Add ½ teaspoon of cumin into the Thermomix bowl.

Add 1.5 teaspoons of curry into the Thermomix bowl.

Add 2 pinches of ground cinnamon into the Thermomix bowl.

Insert the Varoma.

Place 200 grams of halved green beans in the Varoma.

Cook 40 minutes/Varoma/speed spoon.

Place 30 grams of shelled almonds in a skillet, toast until golden, then let cool in the Thermomix bowl.

Put 280 grams of medium couscous semolina into a container in the Thermomix bowl.

Add 20 grams of butter into a container in the Thermomix bowl.

Add 1 teaspoon of salt into a container in the Thermomix bowl.

Pour 350 grams of hot water over the couscous 10 minutes before the end of Thermomix cooking.

Transfer the contents of the Thermomix bowl, including the green beans, into a container and mix.

Garnish the lamb stew with toasted chopped almonds and serve with the couscous.

Distribute 12 fresh mint leaves over the dishes in the Thermomix bowl.
