Wild garlic butter is a great alternative and allows you to indulge after a forest walk. Be aware that the season is short, from late February to May. That’s why I personally freeze my small jars to have it all year round. This recipe makes about 12 small jars. Perfect on pasta (with shellfish), meats, or on bread for an aperitif, for example. I hope you enjoy it!

Transfer the garlic-flavored butter to a bowl or another container and refrigerate. You can also shape it into small rolls (berlingots) using parchment paper or plastic wrap before refrigerating. The berlingots can be sliced into rounds for immediate use or freezing.
