The canelé (or Bordeaux cannelé, but it's a mistake to spell it that way since there is officially only one 'n' in canelé!) is a delicious small cake with a tender heart, a crispy crust, and caramelized flavor. This pastry is believed to have been invented in the 18th century by the nuns of the Annonciades convent (now the Misericorde convent) in Sainte-Eulalie near Bordeaux.

Ingredients

  • milk
    500 g milk
  • butter
    50 g butter
  • Vanilla bean
    ½ Vanilla bean
  • flour
    120 g flour
  • 220 g powdered sugar
  • 2 eggs
  • 1 egg
  • 40 g white rum
  • 1 packet vanilla sugar

Thermomix Instructions

Add to the bowl1–5

  • 500 grammes Lait entier
  • 50 grammes Beurre
  • grammes Sucre en poudre
  • 1 sachet Sucre vanillé
  • 0.5 Gousse de vanille

Attach the lid with the measuring cup.

Cook 7 min / 100°C / speed 1.

Pour into a container and let cool.

Add to the bowl9–13

  • grammes Sucre en poudre
  • 120 grammes Farine
  • Oeufs
  • Oeufs
  • 40 grammes Rhum blanc

Attach the lid with the measuring cup.

Mix 10 sec / speed 6.

Remove the measuring cup.

Mix 30 sec / speed 4, gradually adding the cooled milk through the lid opening.

Pour into a covered container with plastic wrap and refrigerate for 12 hours.

Preheat the oven to 220°C.

Mix the batter after removing it from the fridge and let it come to room temperature.

Pour into buttered canelé molds and bake for 20 minutes at 220°C.

Then extend the baking for 60 minutes at 180°C. The canelé should have a brown crust and a moist interior.
