This mushroom chili is my favorite version when I crave a comforting, spicy dish, but without meat — and without it looking like a bland "vegetarian chili." The mushrooms (half white, half brown for more flavor) perfectly replace ground meat: they absorb the spices, release their juice, and provide a meaty texture that will satisfy even the most carnivorous eaters.

Ingredients

  • cumin
    1 tsp cumin
  • smoked paprika
    1 tsp smoked paprika
  • olive oil
    30 g olive oil
  • salt
    1 tsp salt
  • coconut milk
    100 g coconut milk
  • lime zest
    1 pc lime zest
  • 1 tsp ground coriander
  • ½ tsp sweet paprika
  • 2 garlic cloves
  • 250 g white Paris mushrooms
  • 250 g brown Paris mushrooms
  • 400 g crushed tomatoes
  • 400 g canned red beans
  • 1 pc lime juice

Add to the bowl1–4

  • 1 teaspoon Cumin
  • 1 teaspoon Coriandre en poudre
  • 1 teaspoon Paprika fumé
  • 0.5 teaspoon Piment doux

Attach the lid with the measuring cup.

Cook 3 min / 100°C / speed 1.

  • 30 grams Huile d'olive
  • 2 Gousses d'ail
