Ingredients

  • vinegar
    1 tbsp vinegar
  • garlic
    4 clove garlic
  • onion
    2 onion
  • scallion
    4 scallion
  • parsley
    5 sprigs parsley
  • cloves
    3 cloves
  • eggplant
    1 eggplant
  • pepper
    pepper
  • salt
    salt
  • 1.2 kg chicken breast
  • 3 tbsp oil
  • 1 tbsp colombo spice powder
  • 4 potatoes
  • 1 thyme sprigs
  • 1 Caribbean chili pepper
  • ½ lime lime

Instructions

Drizzle the chicken cubes with oil and vinegar.

Add crushed garlic, chopped onion, and colombo spice. Season with salt and pepper.

Marinate for 20 minutes in the refrigerator.

In a pot, heat the oil and brown the chicken cubes.

Add scallion, parsley, chopped onion, and cloves.

Mix and simmer over low heat for 10 minutes until the meat releases its water.

Add the vegetables, thyme, and chili pepper.

Add water with the remaining colombo spice until the ingredients are covered.

Cover and simmer for 20 minutes. Squeeze in the lime juice and stir.
