Ingredients

  • egg
    3 egg
  • lemon
    3 lemon
  • cornstarch
    20 g cornstarch
  • butter
    30 g butter
  • icing sugar
    100 g icing sugar
  • 100 g granulated sugar
  • 3 egg whites
  • shortcrust or sable pastry
  • 1 pinch pinch of salt

Instructions

Spread the shortcrust pastry in a tart pan lined with parchment paper.

Preheat the oven to 180°C.

2. Prepare the lemon curd:

Start by dissolving the cornstarch in a tablespoon of water.

Mix the granulated sugar with the whole eggs and whisk until the mixture whitens.

Add the grated lemon zest, lemon juice, dissolved cornstarch, and melted butter. Mix well.

Pour the lemon curd over the pastry (or sable). Bake in the oven for 30 minutes, then let cool. Do not turn off the oven.

3. Prepare the meringue:

Beat the egg whites with a pinch of salt until stiff peaks form, then gradually add the icing sugar at the end.

4. Spread the meringue over the tart and try to make 'peaks' with the back of a spoon. Place under the oven grill for 2 or 3 minutes to brown the meringue.
