Ingredients

  • 1 packet of lasagna
  • 3 yellow onions
  • 2 cloves of garlic
  • 1 celery stalk
  • 1 carrot
  • 600 g ground beef
  • 800 g tomato purée
  • 15 cl water
  • 20 cl red wine
  • 2 bay leaves
  • thyme
  • basil
  • 3 pinches of grated nutmeg
  • 70 g grated cheese
  • 125 g Parmesan cheese
  • salt
  • pepper
  • 100 g flour
  • 125 g butter
  • 1 liter milk

Instructions

Sauté the chopped garlic and sliced onions in a little olive oil.

Add the chopped carrot and celery stalk, then the meat and cook everything together.

After a few minutes, add the red wine and cook until it evaporates.

Add the tomato purée, water, and herbs. Season with salt and pepper, then let simmer over low heat for 45 minutes.

Prepare the béchamel: melt 100 g of butter.

Remove from heat, add the flour all at once.

Return to the heat and whisk until the mixture is smooth.

Gradually add the milk.

Stir constantly until the mixture thickens.

Then flavor with nutmeg, season with salt and pepper. Cook for about 5 minutes over very low heat, stirring. Set aside.

Preheat the oven to 200°C (thermostat 6-7). Grease the lasagna dish. Layer a thin layer of béchamel, then lasagna sheets, bolognese, béchamel, and Parmesan. Repeat this operation 3 times.

On the top layer of lasagna, only spread béchamel and cover with grated cheese. Dot with small pieces of butter.

Bake for about 25 minutes.
