This green lentil stew with cherry tomatoes and ginger is a dish often prepared when looking for something warm, vegetarian, nourishing, and quick to make without meat. Green lentils (not the coral ones that turn into purée) stay slightly firm after cooking, have a lovely nutty flavor, and are perfect for balanced meals: plenty of plant-based proteins, fiber, iron, and they cost next to nothing.

Ingredients

  • carrot
    80 g carrot
  • ginger
    10 g ginger
  • olive oil
    60 g olive oil
  • salt
    ¾ tsp salt
  • water
    1000 g water
  • 80 g white onions
  • 200 g red cherry tomatoes
  • 280 g lentils
  • 1 vegetable bouillon cube

Thermomix Instructions

Add to the bowl1–3

  • 80 grammes Oignons blancs
  • 80 grammes Carottes
  • 10 grammes Gingembre

Add the lid with the measuring cup.

Mix 5 seconds at speed 8.

Scrape down the sides of the bowl with the spatula.

Add to the bowl7–8

  • 60 grammes Huile d'olive
  • 200 grammes Tomates cerises rouges

Add the lid with the measuring cup.

Sauté 5 minutes at 120°C, speed 1.

Add to the bowl11–14

  • grammes Lentilles
  • 0.75 cuillère à café Sel
  • grammes Eau
  • 1 Cube de bouillon de légumes

Place the steaming basket on top of the lid instead of the measuring cup to prevent splatters.

Cook for 45 minutes at 120°C, speed spoon.

Check the lentils for doneness. If you prefer a less liquid stew (more like a thick dal), extend the cooking time by about fifteen minutes.

Serve in a family soup tureen or divide into 4 deep plates.
