Ingredients

    100 g flour
  • salt
    1 pinch salt
  • 200 g Speculoos
  • 2 Eggs
  • 50 g Brown sugar
  • 140 g Liquid fresh cream
  • 50 g Grapeseed oil
  • 1 tsp Baking powder
  • ¼ tsp Ground cinnamon (optional)

Thermomix Instructions

Place 200 grams of speculoos into the Thermomix bowl.

Add the lid with the measuring cup.

Pulse 10 sec/speed 9.

Transfer to a container and set aside.

Add to the bowl5–6

  • 2 Oeufs
  • 50 grammes Cassonade

Add the lid with the measuring cup.

Mix 2 min/speed 5.

Scrape down the sides of the bowl with a spatula.

Add to the bowl10–11

  • 140 grammes Crème fraîche liquide entière
  • 50 grammes Huile de pépins de raisin

Add the lid with the measuring cup.

Scrape down the sides of the bowl with a spatula.

Add to the bowl15–16

  • 100 grammes Farine
  • 1 cuillère à café Levure chimique

Add ¼ teaspoon of ground cinnamon (adjust to taste) and (optional) into the Thermomix bowl.

Add a pinch of salt into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 20 sec/speed 4.

Scrape down the sides of the bowl with a spatula.

Add the lid with the measuring cup.

Mix 15 sec/speed 4.

Add the reserved speculoos into the Thermomix bowl.

Scrape down the sides of the bowl with a spatula.

Preheat the oven to 180°C.

Grease and flour your chosen mold (no larger than 20 cm in diameter).

Pour the batter into the mold.

Bake in the oven at 180°C for 30 minutes. Use static heat. Adjust baking time by a few minutes depending on your oven's functionality.

Unmold the cake and let it cool on a wire rack.

Store wrapped in aluminum foil.
