Confit Cod with Garlic in Thermomix

Traditional cuisine dishes often showcase numerous variations depending on regions or family traditions. This is the case with this confit cod with garlic, or 'ajoarriero' in Spanish: bacalao al ajoarriero, which has many different versions across Spain, and can be easily customized to your taste.

Ingredients

  • olive oil
    250 cup olive oil
  • salted cod
    500 g salted cod
  • parsley
    2 tbsp parsley
  • 3 Garlic cloves
  • 300 g Spring onions
  • 150 g Red bell peppers
  • 150 g Green bell peppers
  • 200 g Crushed tomatoes
  • 50 g Chili paste

Thermomix Instructions

Add to the bowl1–2

  • grammes Huile d'olive
  • 3 Gousses d'ail

Add the lid with the measuring cup.

Sauté for 7 minutes / 120°C / Spoon speed.

Place 500 grams of desalted salted cod on your work surface into the Thermomix bowl.

Meanwhile, place the well-dried cod fillets, skin side down, in a 1.5-liter aluminum loaf mold and set in the Varoma.

Pour the oil with garlic over the fillets, cover the Varoma, and set aside.

Add to the bowl8–11

  • 300 grammes Oignons nouveaux
  • 150 grammes Poivrons rouges
  • 150 grammes Poivrons verts
  • grammes Huile d'olive

Add the lid with the measuring cup.

Mix for 4 seconds / speed 4.

Add the Varoma.

Cook for 25 minutes / Varoma / Spoon speed.

Remove the Varoma.

Add to the bowl17–18

  • 200 grammes Tomates concassées
  • 50 grammes Purée de piment

Add the lid with the measuring cup.

Sauté for 5 minutes / 120°C / Spoon speed.

Transfer to a container and set aside.

Wash and dry the Thermomix bowl.

Drain the cod fillets, remove the skin and bones, shred the flesh, and place in the reserved container over the sauce.

Using a fork, remove the garlic and set aside.

Let the preparation cool and rest at the bottom of the container for about 5 minutes, so the oil rises to the surface.

Without stirring, carefully pour the oil into another container, taking care not to spill the preparation.

Return the garlic to the Thermomix bowl and add 50 g of the reserved oil.

Add the lid with the measuring cup.

Mix for 20 seconds / speed 5.

Scrape down the sides of the bowl with the spatula.

Add the lid with the measuring cup.

Mix for 2 minutes / speed 4.

Place the measuring cup and slowly pour the oil over the lid to emulsify (without removing the cup).

Transfer the contents of the Thermomix into the dish with the rest of the preparation and mix.

Add 2 tablespoons of chopped fresh parsley (only the leaves) to the Thermomix bowl and mix into the preparation.

Serve hot.
