Ingredients

  • flour
    2 g flour
  • lemon
    1 lemon
  • pepper
    pepper
  • salt
    salt
  • butter
    20 g butter
  • 2000 g bouchot mussels
  • 1 yellow onion
  • 15 cl dry white wine
  • 4 garlic cloves
  • 1 small bunch of parsley

Instructions

Scrub the mussels well, then cook them dry in a saucepan. Stop cooking (about 5-6 minutes) as soon as all the mussels are open.

Drain the mussels and strain the cooking liquid they released.

In a sauté pan, sauté the sliced onion in butter over low heat. When it turns golden, sprinkle with flour, mix, and add the mussel cooking liquid and white wine.

Let simmer for about 15 minutes over low heat, stirring. Then add salt, pepper, garlic, parsley, and lemon juice.

Continue cooking for another minute, then add the mussels.

Serve very hot with plain rice.
