There are recipes we make every year as soon as the season returns, and these rhubarb muffins are definitely one of them. With their tender texture and a light touch of acidity, they have that simultaneously indulgent and fresh quality that always pleases. The rhubarb adds a lot of character without being too sweet, which sets them apart from more traditional muffins and gives them a true homemade flavor.

Ingredients

  • butter
    70 g butter
  • flour
    250 g flour
  • rhubarb
    225 g rhubarb
  • 140 g powdered sugar
  • 120 g semi-skimmed milk
  • 2 eggs
  • 1 packet vanilla sugar
  • 1 packet baking powder

Thermomix Instructions

Preheat the oven to 180°C.

Add to the bowl2–6

  • 70 grammes Beurre
  • grammes Sucre en poudre
  • 1 sachet Sucre vanillé
  • 120 grammes Lait demi-écrémé
  • 2 Oeufs

Cover with the lid and insert the measuring cup.

Mix for 2 minutes at speed 4.

Add to the bowl9–10

  • 250 grammes Farine
  • 1 sachet Levure chimique

Cover with the lid and insert the measuring cup.

Mix for 20 seconds at speed 4.

Add 225 grams of peeled and diced rhubarb into the Thermomix bowl.

Cover with the lid and insert the measuring cup.

Mix for 10 seconds at speed 2.

Transfer the batter from the Thermomix into muffin molds and bake in the oven for 25 minutes at 180°C. Adjust the time based on the size of your molds and your oven.

Once cooled, optionally sprinkle with powdered sugar.
