Ingredients

  • 750 g lamb
  • ½ bottle sweet cider
  • 2 can flageolets
  • 2 tbsp veal stock
  • Provence herbs

Instructions

Pour about ten tablespoons of olive oil into the bottom of the Dutch oven.

Slice the 2 onions into strips and place them in the Dutch oven.

Let simmer for about 10 minutes, stirring. The onions should start to brown but not too much.

Add pepper, salt, a few cloves, and a generous amount of Provence herbs. Stir.

Place the lamb stew at the bottom of the Dutch oven. Let it brown thanks to the onions and olive oil. Stir occasionally for about 10 minutes.

Pour in half a bottle of sweet cider plus a glass of water. Stir. Cover and simmer for about 45 minutes.

Add the veal stock (or other stock). Stir and let simmer for 15 minutes.

Stir occasionally.

Serve with the flageolets, which you will have reheated separately.
