Shortcrust pastry is a base dough used for both savory and sweet tarts. It is characterized by its smooth and crisp texture, achieved thanks to the gluten and starch contained in wheat flour. We recommend using soft butter that is not fully melted, and if the filling is neither liquid nor soft, it is possible to prick the entire bottom of the dough with a fork to create a sieve that allows air to pass through.
