However, Italian cuisine itself, proud of its traditions, has never stopped adapting this iconic recipe to the seasons and regions. In Liguria, the birthplace of pesto, it’s common to find lighter, more vegetable-based variations — and sometimes surprising ones. This zucchini and basil pesto is a delicious example.

Ingredients

  • zucchini
    400 g zucchini
  • salt
    5 g salt
  • olive oil
    60 g olive oil
  • Parmesan cheese
    60 g Parmesan cheese
  • pine nuts
    20 g pine nuts
  • basil
    35 g basil
  • 1 garlic clove

Thermomix Instructions

Place 1 peeled garlic clove into the Thermomix bowl.

Add the lid with the measuring cup.

Blend 3 sec/speed 7.

Scrape down the sides of the bowl with the spatula.

Add to the bowl5–7

  • 400 grammes Courgettes
  • 5 grammes Sel
  • 60 grammes Huile d'olive

Place the lid with the measuring cup.

Cook 15 min/120°C/speed 1.

Add to the bowl10–12

  • 60 grammes Parmesan
  • 20 grammes Pignons de pin
  • 35 grammes Basilic frais

Place the lid with the measuring cup.

Blend 15 sec/speed 8.

Scrape down the sides of the bowl with the spatula.

Transfer to a jar.

Serve immediately.
