I love seafood quiches, but I must admit they often leave me a bit hungry. Too often, they are rather bland, with a filling that lacks depth and personality. So, starting from a very simple basic recipe, I wanted to give it my own twist to make it truly flavorful and balanced.

Ingredients

  • Comté cheese
    100 g Comté cheese
  • shallot
    80 g shallot
  • white wine
    70 g white wine
  • thick cream
    120 g thick cream
  • shortcrust pastry
    1 shortcrust pastry
  • lemon zest
    ¼ lemon zest
  • 2 garlic cloves
  • 30 g semi-salted butter
  • 350 g frozen seafood cocktail
  • 2 eggs
  • ½ tsp fish fumet
  • 1 tbsp pastis

Thermomix Instructions

Place 100 grams of Comté cheese into the Thermomix bowl.

Add the lid with the measuring cup.

Pulse 6 sec/speed 10.

Transfer to a container and set aside.

Place 2 peeled garlic cloves into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 3 sec/speed 7.

Scrape down the sides of the bowl with the spatula.

Add 80 grams of peeled shallots into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 5 sec/speed 5.

Scrape down the sides of the bowl with the spatula.

Add 30 grams of semi-salted butter into the Thermomix bowl.

Add the lid with the measuring cup.

Sauté 5 min/120°C/speed 1.

Add 350 grams of frozen seafood cocktail into the Thermomix bowl.

Add the lid with the measuring cup.

Add 70 grams of white wine into the Thermomix bowl.

Add ½ teaspoon of fish fumet into the Thermomix bowl.

Add 1 tablespoon of pastis into the Thermomix bowl.

Add the lid without the measuring cup.

Cook 8 min/100°C/spoon speed.

Add 120 grams of thick fresh cream into the Thermomix bowl.

Add the lid with the measuring cup.

Cook 2 min/98°C/spoon speed.

Pour the contents of the bowl into the steaming basket. Collect the juice in a container.

Let the juice cool for a few minutes before returning it to the bowl.

Preheat the oven to 180°C.

Add 2 eggs into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 10 sec/speed 4.

Place 1 shortcrust pastry into a tart pan in the Thermomix bowl.

Distribute the seafood over the tart base and gently pour the egg mixture.

Sprinkle the quiche with grated Comté cheese.

Bake in convection mode for 35 minutes at 180°C.

Sprinkle the grated lemon zest over the quiche in the Thermomix bowl.

Serve immediately.
