The classic Quiche Lorraine ranks high among the favorite recipes of the French; it is prominently displayed in bakeries and delicatessens, but it is especially enjoyed at home. The Thermomix is not essential for this recipe, but as often, it helps save a lot of time. Preparing the shortcrust pastry is very easy, and it results in less dishwashing.

    75 g butter
  • flour
    150 g flour
  • water
    50 g water
  • salt
    ¼ tsp salt
  • thick cream
    250 g thick cream
  • pepper
    2 pinch pepper
  • 200 g smoked bacon
  • 4 eggs
  • 80 g grated Gruyère

Thermomix Instructions

Preheat the oven to 180°C.

Place 75 grams of butter cut into pieces into the Thermomix bowl.

Add 150 grams of flour into the Thermomix bowl.

Add 50 grams of water into the Thermomix bowl.

Add ¼ teaspoon of salt into the Thermomix bowl.

Attach the lid with the measuring cup.

Mix 1 min/speed knead.

Roll out the dough on a floured work surface with a rolling pin and transfer it to a tart pan lined with parchment paper.

Prick the bottom of the tart with a fork.

Add 200 grams of smoked bacon cut into cubes into the Thermomix bowl.

Attach the lid with the measuring cup.

Sauté 3 min/120°C/speed spoon.

Transfer the bacon to the steaming basket to drain.

Add 250 grams of thick fresh cream into the Thermomix bowl.

Add 4 eggs into the Thermomix bowl.

Add ¼ teaspoon of salt into the Thermomix bowl.

Add 2 pinches of pepper into the Thermomix bowl.

Add 40 grams of grated Gruyère (optional) into the Thermomix bowl.

Attach the lid with the measuring cup.

Mix 30 sec/speed 4.

Distribute the bacon over the tart dough and pour the mixture from the bowl over it.

Sprinkle 40 grams of grated Gruyère (optional) over the filling in the Thermomix bowl.

Bake in the oven for 25 minutes at 180°C.
