The classic Lorraine quiche ranks high among the favorite recipes of the French. You can find it in bakeries and delicatessens, but it is especially enjoyed at home. The Thermomix is not essential for this recipe, but it often saves us a lot of time. Making the shortcrust pastry is very easy, and it results in less dishwashing.

Ingredients

  • butter
    75 g butter
  • flour
    150 g flour
  • water
    50 g water
  • salt
    ¼ tsp salt
  • thick cream
    250 g thick cream
  • pepper
    2 pinch pepper
  • 200 g smoked bacon
  • 4 eggs
  • 80 g grated Gruyère

Thermomix Instructions

Preheat the oven to 180°C.

Add to the bowl2–5

  • 75 grammes Beurre
  • 150 grammes Farine
  • 50 grammes Eau
  • cuillère à café Sel

Attach the lid with the measuring cup.

Mix 1 min/speed knead.

Roll out the dough on a floured work surface using a rolling pin and transfer it to a tart pan lined with parchment paper.

Prick the bottom of the tart with a fork.

Add 200 grams of smoked bacon cut into cubes into the Thermomix bowl.

Attach the lid with the measuring cup.

Sauté 3 min/120°C/spoon speed.

Transfer the bacon to the steaming basket to drain.

  • 250 grammes Crème fraîche épaisse
  • 4 Oeufs
  • cuillère à café Sel
  • 2 pincées Poivre
  • grammes Gruyère rapé

Attach the lid with the measuring cup.

Mix 30 sec/speed 4.

Distribute the bacon over the tart dough and pour the mixture from the bowl on top.

Sprinkle 40 grams of grated Gruyère (optional) over the filling in the Thermomix bowl.

Bake in the oven for 25 minutes at 180°C.
