Ingredients

  • onion
    1 medium onion
  • carrot
    1 grated carrot
  • margarine
    2 margarine
  • balsamic vinegar
    2 Tbsp balsamic vinegar
  • water
    ½ L water
  • pepper
    pepper
  • thyme
    thyme
  • bay leaf
    bay leaf
  • rosemary
    rosemary
  • 700 g beef roast
  • sauce thickener or maize starch

Instructions

In a cast iron pot, heat the fat. Brown the roast on all sides.

Season with pepper, add the carrots, onion, and aromatic herbs.

Sear the meat well without burning it. Add the balsamic vinegar, let it reduce for 2 minutes, then add the water. Simmer for 15 minutes.

Cook for less time if you prefer it rare, or longer if you like it well done.

At the end, you can add sauce thickener or maize starch to slightly thicken the sauce if necessary.
