Here's a new soup made from super creamy and smooth broccoli, thanks to the addition of potatoes. It's a treat when you get the right balance! For the seasoning, it's classic—a mix of fresh basil and parsley, a teaspoon of homemade vegetable stock, pepper, and nutmeg. Who said broccoli soup isn't tempting? :)

Ingredients

  • shallot
    1 shallot
  • olive oil
    30 g olive oil
  • broccoli
    550 g broccoli
  • parsley
    5 sprig parsley
  • basil
    5 leaf basil
  • water
    400 g water
  • salt
    ½ tsp salt
  • pepper
    2 pinch pepper
  • 250 g potatoes
  • 2 pinch ground nutmeg
  • 1 tsp vegetable stock

Thermomix Instructions

Place 1 peeled and halved shallot into the Thermomix bowl.

Add the lid with the measuring cup.

Blend 5 sec/speed 7.

Scrape down the sides of the bowl with the spatula.

Add 30 grams of olive oil into the Thermomix bowl.

Add the lid with the measuring cup.

Sauté 3 min/120°C/speed 3.

  • 250 grammes Pommes de terre
  • 550 grammes Brocolis
  • 5 brins Persil frais
  • 5 feuilles Basilic frais
  • 400 grammes Eau

  • 2 pincées Poivre
  • 2 pincées Noix de muscade moulue

Add the lid with the measuring cup.

Cook 30 min/100°C/speed 1.
