Tiramisu (from Italian "Tiramisù") is a traditional Italian dessert. Literally, the name means: "Pull me up," "Lift my spirits," or "Give me strength again!" Personally, I prefer the second! This Thermomix Tiramisu is light and perfect after a hearty meal, as it is refreshing and not too sweet. A small note: don’t be overwhelmed by the instructions; they are actually well detailed to help you as much as possible.

Ingredients

  • water
    500 g water
  • coffee
    80 g coffee
  • mascarpone
    500 g mascarpone
  • salt
    1 pinch salt
  • 5 tbsp powdered sugar
  • 5 eggs
  • 5 tbsp white rum
  • 400 g spoon biscuits
  • 50 g unsweetened cocoa powder

Thermomix Instructions

Add to the bowl1–2

  • 500 grammes Eau
  • 80 grammes Café moulu

Prepare the coffee.

Set aside.

Add to the bowl5–6

  • 5 cuillères à soupe Sucre en poudre
  • Oeufs

Add the whisk attachment.

Cover with the lid and the measuring cup.

Mix 6 min / speed 4.

Remove the whisk.

Add the lid without the measuring cup.

Mix 2 min 10 sec / speed 4, slowly adding 500 grams of mascarpone through the lid opening during the entire mixing process.

Transfer to a mixing bowl.

Wash and dry the Thermomix bowl thoroughly.

Add the whisk attachment.

Add to the bowl16–17

  • Oeufs
  • 1 pincée Sel

Cover with the lid without the measuring cup.

Mix 5 min / speed 4.

The egg whites should be very firm.

Gently fold the egg whites into the cream mixture using a spatula.

Add to the bowl22–24

  • 5 cuillères à soupe Rhum blanc
  • grammes Biscuits à la cuillère
  • grammes Biscuits à la cuillère

Add a layer of half the cream. Spread evenly. Create a second layer with the remaining biscuits, again pressing them together tightly.

Finish with the remaining cream, smoothing the surface well.

Sprinkle 50 grams of unsweetened cocoa powder through a fine sieve into the Thermomix bowl.

Generously dust the entire surface of the cream with cocoa powder. Use a fine sieve: gently place small amounts of cocoa into the sieve and tap lightly on the edge to disperse a thick layer of cocoa over the entire dessert.

Remove excess cocoa from the edges of the mold.

Refrigerate for 12 hours.
