Ingredients

  • 1 quarter pumpkin
  • 1 onion
  • 1 carton liquid fresh cream
  • pepper
  • salt
  • ground nutmeg
  • oil
  • chopped parsley

Instructions

Cut the pumpkin flesh into large cubes.

Slice the onion and sauté it in a pot with a little oil.

Add the pumpkin cubes to the pot and cover with water (just enough to cover the pumpkin). Bring to a boil and cook for about 45 minutes to 1 hour.

Add the liquid cream, season with salt and pepper, and add nutmeg to taste. Blend until smooth.

When serving, sprinkle with chopped parsley.
