Who has never thrown away the green part of a leek? Most of us only eat the white part. Yet, the green is richer in nutrients! It is also high in fiber. Perfect for everyone! After a thorough rinse to remove dirt, trimming damaged parts, and chopping into chunks, it can be frozen for several months or stored a few days in the refrigerator.
