In Bologna, in the heart of Emilia-Romagna, the recipe for ragù has been kept as a state secret since the 18th century. Minced beef, milk, red wine, tomatoes — proportions vary among families, but the ritual remains unchanged: a cast-iron pot, long simmering with almost monastic patience. For centuries, this rich and complex sauce was reserved for the wealthy. Then times changed.
