  • Vanilla bean - 1
  • Almond meal - 40 grams
  • Butter - 140 grams

Thermomix Instructions

Place 100 grams of brown sugar into the Thermomix bowl.

Add 1 vanilla bean (scraping the seeds only from the split bean with the tip of a knife) into the Thermomix bowl.

Add the lid with the measuring cup.

Pulse 20 seconds at speed 10.

Scrape down the sides of the bowl with a spatula.

Add 40 grams of almond meal into the Thermomix bowl.

Add 140 grams of butter into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 20 seconds at speed 6.

Mix 1 minute at speed 3.

Add a pinch of salt into the Thermomix bowl.

Add 1 egg into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 30 seconds at speed 4.

Add 225 grams of T55 flour into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 30 seconds at kneading speed.

Transfer the dough, form a ball, and roughly roll it out into a circle between 2 sheets of parchment paper (be careful—it sticks a bit).

Refrigerate for 8 hours.

Zest 2 organic limes.

Add 180 grams of lime juice (about 6 limes) into the Thermomix bowl.

Add 140 grams of brown sugar into the Thermomix bowl.

Add 3 eggs (about 180 grams) into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 10 seconds at speed 6.

Add roughly chopped 15 fresh basil leaves into the Thermomix bowl.

Add the lid without the measuring cup.

Heat for 12 minutes at 80°C, speed 3.

Pour through a sieve to filter out the basil.

Collect the infused cream in a bowl.

Let cool between 35-45°C (about 5 to 10 minutes).

Return the cream to the bowl of the robot.

Add 160 grams of chopped butter into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 30 seconds at speed 4.

Transfer to the bowl used earlier.

Refrigerate for 3 hours.

Preheat the oven to 170°C.

Roll out the dough into a 3mm thick circle to fit your tart pan (about 22cm).

Bake in convection mode at 170°C for 20 minutes.

Let the tart base cool (be careful—the crust is fragile before cooling).

Just before serving, pour the chilled cream and garnish with lime zest.
