Ingredients

  • eggplant
    350 g eggplant
  • zucchini
    350 g zucchini
  • onion
    350 g onion
  • garlic
    3 clove garlic
  • olive oil
    6 tbsp olive oil
  • thyme
    1 sprig thyme
  • bay leaf
    1 leaf bay leaf
  • pepper
    pepper
  • salt
    salt
  • 350 g red and green bell pepper
  • 500 g ripe tomatoes

Instructions

Cut the peeled tomatoes into quarters.

Slice the eggplants and zucchinis into rounds.

Slice the bell peppers into strips.

And the onion into rings.

Heat 2 tablespoons of oil in a skillet.

Sauté the onions and bell peppers in the hot oil.

Add the tomatoes, chopped garlic, thyme, and bay leaf once they are tender.

Season with salt and pepper and let simmer gently, covered, for 45 minutes.

Meanwhile, prepare the eggplants and zucchinis. Cook them separately or together in olive oil for 15 minutes.

Check that the vegetables are no longer firm. Add them to the tomato mixture and cook on very low heat for an additional 10 minutes.

Adjust seasoning with salt and pepper if needed.
