Ingredients

  • green onion
    1 bunch green onion
  • parsley
    2 bunch parsley
  • mint
    1 bunch mint
  • lemon
    1 small lemon
  • olive oil
    3 tbsp olive oil
  • salt
    2 pinch salt
  • 4 ripe tomatoes
  • 1 small handfuls medium brown bulgur

Instructions

Before starting, soak a handful of bulgur in a bowl of water for 15 minutes and let soften.

Wash and trim the parsley, then chop it with a knife.

Repeat the process with the mint to obtain leaves about 1 cm long.

Put everything into a salad bowl.

Finely chop the green onions, dice the tomatoes, and add everything to the bowl.

When the bulgur is no longer crunchy, remove it from the water and squeeze it between your hands to drain. Add it to the bowl with the rest.

Squeeze the whole lemon and pour the juice into the bowl. Add the salt and the 3 tablespoons of olive oil.

The appearance of the tabbouleh should be shiny, indicating enough olive oil has been added.
