Having tested it countless times, today I offer you my version of oat flake bread cooked in a Dutch oven, prepared with your Thermomix. Bakery-quality, with the added joy of homemade bread and the aroma of baking filling your home. Pure happiness! It’s important to note that for bread, humidity is crucial. It helps achieve a very airy crumb and beautifully risen bread. Feel free to vary the flours and add seeds.

Ingredients

  • water
    300 g water
  • salt
    10 g salt
  • olive oil
    15 g olive oil
  • 28 g fresh baker's yeast
  • 100 g oat flakes
  • 200 g T110 flour
  • 200 g T45 flour

Add water

Pour the water into the Thermomix bowl.

Heat the mixture

Heat the water and yeast mixture to activate the yeast.

Add flakes

Add the oat flakes into the bowl.

Pour the T110 flour into the bowl.

Pour the T45 flour into the bowl.

Add salt

Add the salt into the bowl.

Add oil

Pour the olive oil into the bowl.

Knead the dough

Knead the dough until it is smooth and elastic.

First rise

Transfer the dough to a container, cover with a damp cloth, and let it rest at room temperature.

Shape the bread

Sprinkle some oat flakes on the work surface, form a ball with the dough, and shape it as desired.

Prepare the Dutch oven

Place a sheet of parchment paper at the bottom of the Dutch oven and put the dough on top.

Moisten and score

Moisten the dough by hand or with a spray, score lengthwise according to your preference, and sprinkle some oat flakes on top.

Bake the bread

Place the Dutch oven in the oven, covered, and bake.

Remove the lid

After 30 minutes of baking, carefully remove the lid of the Dutch oven to finish baking and achieve a crispy crust.

Cool the bread

Turn off the oven and let the bread cool inside until the oven temperature drops.
