In India, dal is eaten every day, from north to south, in palaces as well as street stalls. Each region has its version: dal tadka in the north with yellow lentils and a sizzling spice tempering, sambar in the south with vegetables and tangy tamarind. But everywhere, the principle remains the same: lentils simmered with spices until they almost melt, creating a comforting texture that is almost between soup and purée.
