Ingredients

  • sugar
    30 g sugar
  • milk
    15 cl milk
  • vanilla extract
    1 tsp vanilla extract
  • salt
    1 pinch salt
  • 10 g caramel
  • 1 eggs

Instructions

Prepare the crème anglaise:

Bring the milk to a boil with the vanilla. Meanwhile, whisk the egg yolk with 15g of sugar until the mixture whitens. Add the hot milk to the mixture and return to the heat until the mixture thickens. Stir constantly with a wooden spoon, do not boil the cream. The cream is ready when it coats the back of a spoon.

Refrigerate.

The meringue:

Whisk the egg whites with a pinch of salt. Gradually add 15g of sugar. Once the whites are stiff, place them in ramekins and cook for 1 minute in the microwave at low power.

Assembly:

Pour the crème anglaise into a dish and place the meringue on top. Drizzle the islands with caramel to your liking.

Serve chilled.
