Ingredients

  • Veal Shank
    6 slice Veal Shank
  • tomato
    2 tomato
  • garlic
    2 clove garlic
  • onion
    1 sliced onion
  • butter
    50 g butter
  • lemon juice
    1 tsp lemon juice
  • flour
    3 tbsp flour
  • pepper
    pepper
  • salt
    salt
  • orange zest
  • 3 fillets anchovy fillets
  • ½ cube chicken bouillon cube
  • 15 cl dry white wine

Instructions

Boil the tomatoes, peel them, then roughly chop. Season the veal slices with salt and pepper. Coat them well with flour.

In a casserole, brown the meat in hot butter. Remove and replace with the tomatoes, onion, and garlic. Return the meat and pour in the white wine. Let the sauce reduce by half.

Add the crumbled bouillon cube into 30 cl of water in the casserole. Season lightly with salt and pepper. Let simmer for 1 hour.

Cut the orange zest into thin strips. Boil them, rinse, and drain. Chop the anchovy fillets.

Add lemon juice, anchovies, and julienned orange zest to the casserole and simmer for 10 minutes. Serve with rice, pasta, or a risotto.
