Ratatouille is my direct ticket to vacations in the South. The smell of vegetables simmering with olive oil, garlic, and Provençal herbs... it smells like summer, a garden overflowing, outdoor meals under the fig tree. At home, we often prepare a large batch when zucchini and eggplants from the market pile up — and the next day, served cold with fresh bread, it’s even better.

Ingredients

  • olive oil
    20 g olive oil
  • bay leaf
    1 leaf bay leaf
  • tomato
    300 g tomato
  • salt

  • zucchini
    200 g zucchini
  • eggplant
    300 g eggplant
  • 50 g red bell peppers
  • 50 g yellow bell peppers

  • 1 yellow onion
  • 3 garlic cloves
  • 1 tsp Provençal herbs
  • 1 tbsp vegetable stock

Thermomix Instructions

Place 1 yellow onion cut in half into the Thermomix bowl.

Add 3 garlic cloves into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 5 sec / speed 5.

Scrape down the sides of the bowl with the spatula.

Add 20 grams of olive oil into the Thermomix bowl.

Add 1 teaspoon of Provençal herbs into the Thermomix bowl.

Add 1 bay leaf into the Thermomix bowl.

Add the lid with the measuring cup.

Cook 5 min / 100°C / speed 1.

Add 1 tablespoon of vegetable stock into the Thermomix bowl.

Add 300 grams of chopped tomatoes into the Thermomix bowl.

Add 50 grams of chopped red bell peppers into the Thermomix bowl.

Add 50 grams of chopped yellow bell peppers into the Thermomix bowl.

Add 50 grams of chopped green bell peppers into the Thermomix bowl.

Place the steaming basket on top of the lid to prevent splatters.

Cook 14 min / 100°C / spoon speed.

Add 2 pinches of pepper (adjust to taste) into the Thermomix bowl.

Add 200 grams of chopped zucchini into the Thermomix bowl.

Add the lid with the measuring cup.

Cook 22 min / 100°C / spoon speed.
