Summer, for us, is all about tabbouleh or nothing. Super fresh, lemony, full of fragrant herbs, and filling without being heavy. We make a big bowl on the weekend, and then nibble from it all week: with grilled meats, falafel, or just like that when we're feeling lazy. The Thermomix changed everything: no more spending 30 minutes chopping parsley by hand (my fingers used to reek of herbs for ages before). Just a few seconds and it's perfect, no green purée needed.

Ingredients

  • olive oil
    50 g olive oil
  • water
    50 g water
  • salt
    1 tsp salt
  • lemon juice
    4 tbsp lemon juice
  • fresh mint
    10 leaf fresh mint
  • red bell pepper
    1 red bell pepper
  • tomato
    4 tomato
  • cucumber
    1 cucumber
  • 300 g medium couscous semolina
  • 1 yellow onion
  • 20 g raisins

Thermomix Instructions

Place 300 grams of medium couscous semolina into the Thermomix bowl.

Add 50 grams of olive oil into the Thermomix bowl.

Add 50 grams of water into the Thermomix bowl.

Add 1 teaspoon of salt (adjust to taste) into the Thermomix bowl.

Add 4 tablespoons of lemon juice (adjust to taste) into the Thermomix bowl.

Attach the lid with the measuring cup.

Mix for 15 seconds at speed 4.

Transfer to a salad bowl and set aside.

Place 1 yellow onion cut into four pieces into the Thermomix bowl.

Add 10 fresh mint leaves into the Thermomix bowl.

Attach the lid with the measuring cup.

Mix for 4 seconds at speed 5.

Scrape down the sides of the bowl with a spatula.

Add 1 red bell pepper cut into pieces into the Thermomix bowl.

Add 4 tomatoes cut into pieces into the Thermomix bowl.

Add 1 cucumber cut into pieces into the Thermomix bowl.

Attach the lid with the measuring cup.

Mix for 6 seconds at speed 4.

Add 20 grams of raisins (optional) into the Thermomix bowl.

Mix with the cooked semolina.

Refrigerate for 30 minutes before serving.
