Ingredients

  • mascarpone
    250 g mascarpone
  • 3 eggs
  • 100 g brown sugar
  • 1 bag vanilla sugar
  • 24 spoon biscuits
  • 50 cl unsweetened black coffee
  • 30 g bitter cocoa

Instructions

Separate the whites from the yolks.

Mix the yolks with the brown sugar and vanilla sugar.

Add the mascarpone and whisk.

Whip the egg whites until stiff and gently fold them into the previous mixture with a spatula.

Briefly dip the biscuits in the coffee before lining the bottom of the dish with them.

Cover with a layer of mascarpone cream, then repeat the process with alternating layers of biscuits and cream, ending with the cream layer.

Dust with cocoa powder.

Refrigerate for at least 4 hours before serving chilled.
