The origin of donuts dates back to Roman times, where they were pieces of dough fried and covered with honey sauce. The tradition was to fry donuts during festivals celebrating the calends of March. The calends corresponded to the first day of each month, and March marked the beginning of the year.

Ingredients

  • butter
    80 g butter
  • 150 g Semi-skimmed milk
  • 20 g Fresh baker's yeast
  • 500 g T55 flour
  • 2 Eggs
  • 30 g Powdered sugar
  • 1 packet Vanilla sugar

Add to the bowl1–2

  • 150 grammes Lait demi-écrémé
  • 20 grammes Levure de boulanger fraîche

Place the lid with the measuring cup.

Heat for 3 minutes / 37°C / speed 1.

Mix for 7 seconds / speed 5.

Add to the bowl6–10

  • 500 grammes Farine T55
  • 2 Oeufs
  • 80 grammes Beurre
  • 30 grammes Sucre en poudre
  • 1 sachet Sucre vanillé

Place the lid with the measuring cup.

Mix for 3 minutes / kneading function.

Transfer to a bowl covered with a cloth and let rest for 2 hours.

Place the dough on a floured work surface.

Roll out the dough with a rolling pin to about 1 cm thickness.

Use a glass or a cutter to cut out round shapes.

Cover with a cloth and let rest for 60 minutes.

Heat oil in a saucepan.

Once the oil is bubbling, add 1 or 2 donuts.

Monitor the cooking; the donuts should be golden on each side.

Drain the donuts on paper towels and dust with powdered sugar.
