Between the ocean and mountains, the Basque Country is a land of character, and its cuisine is the most vibrant reflection of it. Piperade, this colorful mixture of peppers, tomatoes, and onions, slowly simmered in olive oil, originated in farms of the Southwest, where each ingredient evokes sunshine, generosity, and Basque identity. It is around this base that the famous Basque sauce was built.
