Prepare the vegetables

Peel and slice the carrots into rounds, cut the leeks into small pieces, cut the onion into quarters.

Place the chicken in the pot and arrange the vegetables around it, along with the bouquet garni. Pour in the white wine and water, then start cooking.

Strain the broth

Remove the chicken and vegetables, keep warm, and strain the broth.
