Ingredients

  • salt
    1 pinch salt
  • mascarpone
    500 g mascarpone
  • strawberry
    18 strawberry
  • 200 g Semi-skimmed milk
  • 4 Eggs
  • 4 tbsp Powdered sugar
  • 2 tbsp Pistachio paste
  • 120 g Shelled pistachios
  • 2 tbsp Strawberry syrup
  • 18 Spoon biscuits

Thermomix Instructions

Pour 200 grams of semi-skimmed milk into the Thermomix bowl.

Add 2 tablespoons of strawberry syrup into the Thermomix bowl.

Place the lid with the measuring cup.

Pulse 20 sec / speed 10.

Transfer to a container and set aside.

Rinse and dry the Thermomix bowl.

Add the whisk attachment.

Place 4 egg whites into the Thermomix bowl.

Add a pinch of salt into the Thermomix bowl.

Place the lid without the measuring cup.

Mix 5 min / speed 3.

Transfer to a container and set aside.

Remove the whisk attachment.

Add the 4 egg yolks into the Thermomix bowl.

Add 4 tablespoons of powdered sugar into the Thermomix bowl.

Add 2 tablespoons of pistachio paste into the Thermomix bowl.

Place the lid without the measuring cup.

Mix 3 min / speed 4, gradually add 500 grams of mascarpone through the lid opening.

Transfer to a container and gently fold in the reserved egg whites.

In a baking dish or glass bowl (here I used a 19 cm diameter serving cup), spread one-third of the mascarpone cream.

Dip 9 spoon biscuits into the milk and layer over the mascarpone mixture.

Place 6 washed and chopped strawberries over the layer in the bowl.

Add the second third of mascarpone cream over the strawberries.

Dip another 9 spoon biscuits into the milk and layer over the mascarpone.

Place another 6 washed and chopped strawberries over the layer.

Add the final third of mascarpone cream.

Sprinkle 120 grams of chopped shelled pistachios over the top.

Decorate with halved strawberries on top.

Refrigerate for 12 hours.
