    16 slice ham
  • shallot
    6 shallot
  • butter
    60 g butter
  • tarragon
    1 pinch tarragon
  • thick cream
    500 g thick cream
  • salt
    1 pinch salt
  • pepper
    1 pinch pepper
  • 300 g Chablis
  • 120 g tomato paste

Thermomix Instructions

Preheat the oven to 180°C.

Place 16 slices of ham with the rind removed and rolled in a large dish into the Thermomix bowl.

Put 6 peeled shallots into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 5 sec/speed 5.

Scrape down the sides of the bowl with the spatula.

Add 60 grams of butter cut into pieces into the Thermomix bowl.

Add the lid with the measuring cup.

Cook 5 min/60°C/spoon speed.

Add 300 grams of Chablis into the Thermomix bowl.

Add 1 pinch of fresh tarragon (optional) into the Thermomix bowl.

Add the lid with the measuring cup.

Cook 7 min 30 sec/Varoma/spoon speed.

120°C · 7m 30s

Add 120 grams of tomato paste into the Thermomix bowl.

Add 500 grams of thick fresh cream into the Thermomix bowl.

Add 1 pinch of salt (adjust to taste) into the Thermomix bowl.

Add 1 pinch of pepper (adjust to taste) into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 30 sec/speed 3.

Pour the Chablis sauce over the pre-rolled slices of white ham.

Bake in the oven for 40 minutes at 180°C.
