Made from two brioche doughs — one naturally vanilla, the other with unsweetened cocoa — it offers a result as beautiful as it is delicious. Ingredients

  • butter
    60 g butter
  • salt
    4 g salt
  • sunflower oil
    1 tbsp sunflower oil
  • 310 g Semi-skimmed milk
  • 8 g Dried baker's yeast
  • 50 g Powdered sugar
  • 500 g T45 flour
  • 3 tbsp Unsweetened cocoa powder
  • 3 tbsp Semi-skimmed milk
  • 1 Egg
  • 1 tbsp Vanilla aroma

Add to the bowl1–2

  • grammes Beurre
  • grammes Lait demi-écrémé

Add the lid with the measuring cup.

Heat 3 min / 37°C / speed 2.

Add to the bowl5–6

  • 8 grammes Levure de boulanger déshydratée
  • 50 grammes Sucre en poudre

Cover with a cloth over the lid and let sit for 10 minutes.

Add to the bowl10–12

  • 500 grammes Farine T45
  • 4 grammes Sel
  • 1 cuillère à soupe Arôme vanille

Add the lid with the measuring cup.

Mix 5 min / kneading speed.

Add the softened butter into the Thermomix bowl.

Transfer half of the dough into a bowl.

Transfer to a bowl and cover with a cloth, let rise in a warm place for 60 minutes.

Let both dough balls (vanilla and cocoa) rise in covered bowls with a cloth for 1 hour in a warm place.

Roll out the vanilla dough like a tart crust.

Similarly, roll out the cocoa dough.

Layer the cocoa dough over the vanilla dough. Roll into a log up to 3/4 length.

Cut strips with a knife on the remaining quarter, twist them, then finish rolling to form a log.

Transfer to a brioche mold lined with parchment paper and cover with a cloth. Let rise for 60 minutes.

Preheat the oven to 180°C.

Pour 3 tablespoons of semi-skimmed milk into the Thermomix bowl.

Place 1 egg yolk in a glass in the Thermomix bowl.

Using a brush, glaze the brioche with the milk and egg yolk mixture.

Bake in the oven for 25 minutes at 180°C. Adjust the time based on your oven.
