Invented by Charles Fazi, a servant of Louis XVI, the composition of chocolate mousse can vary but always contains at least chocolate with whipped egg whites or whipped cream. This Thermomix chocolate mousse recipe consists of whipped egg whites into which egg yolks and a bit of cream are incorporated to obtain a smooth, tasty, yet dense and airy mousse :)

Ingredients

  • salt
    1 pinch salt
  • dark chocolate
    300 g dark chocolate
  • 7 Eggs
  • 50 g Powdered sugar
  • 150 g Fresh liquid cream

Thermomix Instructions

Add the whisk attachment.

Place 7 egg whites into the Thermomix bowl.

Add a pinch of salt into the Thermomix bowl.

Add the lid without the measuring cup.

Mix 6 min 30 sec / speed 3. Add 50 grams of powdered sugar gradually over the last 2 minutes through the lid opening of the Thermomix.

Remove the whisk.

Transfer to a container and refrigerate.

Place 300 grams of dark chocolate chopped into pieces into the Thermomix bowl.

Add 150 grams of fresh liquid cream into the Thermomix bowl.

Add the lid with the measuring cup.

Heat 4 min / 60°C / Spoon speed.

Add the 3 egg yolks into the Thermomix bowl.

Add the lid with the measuring cup.

Mix 20 sec / speed 4.

Gently fold this mixture with the whipped egg whites using a spatula.

Transfer to a bowl and refrigerate for 8 hours.
