Tartiflette is a dish that smells of Haute Savoie (and Savoie :)) and is simply and quickly prepared with the Thermomix. The original recipe was developed in the 1980s by the SIR, the Interprofessional Reblochon Union, to promote Reblochon sales. The name "tartiflette" is a recent invention (early 1990s), derived from the Savoyard dialect word for potato "tartiflâ".

Ingredients

  • water
    800 g water
  • salt
    1 tsp salt
  • salt
    2 pinch salt
  • onion
    3 onion
  • olive oil
    1 tsp olive oil
  • pepper
    1 pinch pepper
  • thick cream
    2 tbsp thick cream
  • 1200 g Potatoes
  • 200 g Lardons
  • 1 Reblochon
  • 40 g Apremont

Thermomix Instructions

Place 1200 grams of diced potatoes in the Varoma tray inside the Thermomix bowl.

120°C

Pour 800 grams of water into the Thermomix bowl.

Add 1 teaspoon of coarse salt into the Thermomix bowl.

Add 2 pinches of salt and stir with your hand in the Varoma tray inside the Thermomix bowl.

Place the Varoma in position.

Cook 40 min / Varoma temperature / speed 1.

Remove the Varoma.

Rinse the Thermomix bowl.

Add 3 onions cut in half into the Thermomix bowl.

Cover with the lid and the measuring cup.

Mix 5 sec / speed 5.

Add 200 grams of lardons into the Thermomix bowl.

Add 1 teaspoon of olive oil into the Thermomix bowl.

Add 1 pinch of pepper into the Thermomix bowl.

Cover with the lid and the measuring cup.

Sauté 8 min / 120°C / spoon speed.

Grease a gratin dish.

Layer half of the potatoes at the bottom, then distribute the onions and lardons on top.

Add the remaining potatoes on top.

Spread 2 tablespoons of thick fresh cream over the entire surface of the potatoes. (optional) in the Thermomix bowl.

Place slices of Reblochon, or cut in half lengthwise then again into two, with the rind facing up, on top of the preparation in the Thermomix bowl.

Add 40 grams of Apremont (optional) on top of the preparation in the Thermomix bowl.

Bake in the oven at 220°C for 30 minutes.
